How to prepare this traditional Corfiot dish made with figs and honey? The figs are dried and then soaked in water for a few hours to soften them. Then, they are boiled in a mixture of honey, water, and cinnamon until the liquid thickens into a syrupy consistency. The result is a sweet and sticky treat that is typically served as a dessert or meze (appetizer) with a variety of spirits.

To prepare Sykomaida, you will need:

  • 1 kg dried figs

  • 1 kg honey

  • 1 liter water

  • 1 cinnamon stick

  1. Soak the figs in water for at least 2-3 hours, or until they are soft.

  2. In a large pot, combine the honey, water, and cinnamon stick. Bring the mixture to a boil over medium heat.

  3. Add the soaked figs to the pot and stir gently to coat them in the honey mixture.

  4. Reduce the heat to low and simmer the figs in the honey mixture for 30-40 minutes, or until the liquid has thickened and the figs are coated in a syrupy glaze.

  5. Remove the pot from the heat and let the Sykomaida cool to room temperature.

  6. Serve the Sykomaida as a dessert or meze with a variety of spirits, such as ouzo, tsipouro, or brandy.
